Spiced Millet Coffee Muffins Kit Instructions
This recipe makes 6 muffins

- 150ml whole milk
- 118g unsalted butter
- Apple cider vinegar or regular white vinegar
Want to make it Vegan?
Replace butter with an equal amount of vegan butter & replace whole milk with an equal amount of oat milk. Follow the recipe exactly and bake at 350F for 30 minutes instead

Oat Crumb Topping
Package has:
- Crumb flour mix
- Crumb sugar mix
You will need:
- 68g unsalted butter, melted & warm (not hot)
Instructions
1. Place the crumb sugar mix with the melted butter in a bowl. Stir well until smooth, about a minute.

2. Add the crumb flour mix and use your fingers to rub the mixture together until you have a coarse mixture. Set aside at room temperature while you work on the muffin batter.


Muffins
Package has:
- Muffin flour mix
- Muffin liners
You will need:
- 150ml whole milk
- Room temperature 50g unsalted butter, melted and warm (not hot)
- 1/2 tsp apple cider vinegar (or regular white vinegar)
Instructions
1. Preheat the oven to 350F and prepare your cupcake/muffin pan with liners.

2. Add the melted butter to the muffin flour mix in a bowl. Rub the dry ingredients with the butter to form a coarse, breadcrumb-like texture.

3. Add in the milk and whisk well until smooth.

4. Finally, add the apple cider vinegar and whisk well one last time. Do not over mix at this stage.

5. Transfer 3-4tbsp of batter to each muffin liner and roughly cover the top with the prepared crumb topping- starting at the edges and working your way to the centre.


6. Bake for 27minutes. Allow to cool in the pan. Sift some powdered sugar over the top (if desired) and serve!

You could also warm the muffin for 5-10 seconds in a microwave for a different experience!
